I realize that I have become a bit of a health food nut in my older years. I have been vegan recently and these days I am trying to limit my intake of gluten and genetically modified foods. I also try to “eat clean” which means I avoid processed foods and usually stick with whole foods prepared by me in my home.
Sadly, however, I have done a horrible job transferring those habits to my children. Honestly, they prefer hot dogs, chicken nuggets, pizza and the usual children’s favorites to wholesome meals I prepare for my husband and myself. I have no one to blame but myself for not being stricter and succumbing to their whims.
There preference for the typical kids fare has even crossed over into their other kids’ favorite dish: mac and cheese. They usually prefer the boxed version with the powdered cheese. Sad. However, one day recently, we ran out of the stuff. My hands were forced but luckily I had a box of Velveeta Block cheese on hand in the fridge. I had to get down and gritty and make the dish by scratch! Gasp!
After cooking 2 cups of some pasta al dente, I shredded the cheese with a grater into a pot of heated milk (2 cups) and added a pinch of salt and pepper. I mixed it all until it stirred into a smooth creamy consistency. I then poured the sauce into the pot with the cooked pasta. The final product was so yummy! And the kids loved it too! Finally, I could at least scratch that off of my list and can at last switch away from the powder and be happy in knowing that at least the kids were consuming real cheese for a change! Baby steps.
Velveeta asked me if I knew any Liquid Gold Diggers. I’ll know more soon once they taste these dishes! Why? Because Liquid Gold Diggers love the Liquid Gold of Velveeta.
