Calories: 219

Protein: 5g

Carbohydrates: 44g

Ingedients:

4 medium acorn squash, halved lengthwise with the seeds removed

3 cups of water

2 cups quinoa

2 teaspoons olive oil

1 ½ cups diced onion

1/2 cup diced carrots

1/2 cup diced celery

1 tablespoon minced cardamom

1/8 tablespoon of turmeric

1/2 cup dried cranberries

Preheat oven to 350 degrees F. Adjust rack to the middle shelf.

Simmer the quinoa in 3 cups of water to make fluffy, this should take 15 to 20 minutes.

While the quinoa cooks, add the onions and 1/2 teaspoon of salt and cook until softened, stirring frequently, about 3 to 4 minutes. Stir in the carrots, celery, cardamom and turmeric.

Using fresh apples, cut into small dices and soak with lemon juice.

Cover the pan and simmer the vegetables for 5 minutes until they are tender.

In a big bowl, toss together the quinoa and vegetables. Stir in the dried fruit, diced apples, pumpkin seeds, nutmeg and season with salt and pepper.

Brush the skin of the squash lightly with olive oil. Place the squash, cut side down, in a baking pan.

STUDY: American Women Struggle With Weight While Pregnant

belly of a young pregnant woman holding scales at home (focus on the scales)

A somewhat-depressing new report found that only a third of pregnant women gained the “appropriate” amount of weight while carrying their progeny, while nearly half (47 percent) put on too much and another 21 percent didn’t gain enough. It’s a veritable Goldilocks situation.

For the study, researchers from the Centers for Disease Control and Prevention looked at data from about 3 million birth certificates where a woman carried a single child to term (that’s at least 37 weeks). They pulled the mothers’ height as well as pre-pregnancy and delivery weight to determine how many pounds they gained as well as their body mass index (BMI).

Women who were overweight or obese before getting pregnant were most likely to gain too much weight — 62 and 56 percent of them did, respectively — even though experts say they should gain the least. The guidelines are specific to the mother’s starting weight. Specifically, women with a BMI in the normal range of 18.5 to 24.9 should gain 25 to 35 pounds, overweight women (BMI of 25 to 29.9) are told to put on 15 to 25 pounds, and obese women (BMI of 30 or above) should only gain 11 to 20 pounds. Underweight women (BMI less than 18.5) should gain the most: 28 to 40 pounds.

Here are the Top 10 Family Winter Vacation Destinations

Bellyitch Rewind
family vacation destinations
It  may be time to star planning for Thanksgiving, Christmas and Winter Vacation!
If you live in a cooler climate that experiences wintry weather during the colder months, but aren’t a fan of toughing out the colder days or participating in winter sports, the idea of escaping to a warm, sunny locale for a quick family vacation during winter break can be incredibly appealing. While there are a staggering number of places around the world that enjoy warm weather during the winter months, these are 10 of the best and most family-friendly spots to visit if you’re looking to escape the winter doldrums with your brood.
  1.     Florida Keys – With average temperatures in the 70’s, even during January and February, the Florida Keys offer American families the chance to get as close to the equator as possible without leaving the continental United States. In addition to the many beaches and water sports, there are also ample opportunities to learn more about marine life on a glass-bottomed boat or a chartered eco-tour.
  2.     Dominican Republic – Skipping the country in search of warmer climates doesn’t have to empty your bank account. During the winter months, most resorts in the beautiful and exotic Dominican Republic slash their prices dramatically, leaving their prices well within most budgets. Temperatures during the winter months also tend to hover in the high 70’s to 80’s.
  3.     Maya Riviera, Mexico – With year-round temperature averages of about 78°, the Maya Riviera is a popular destination for those who aren’t wild about winter weather. From sparkling beaches to spectacular Mayan ruins, there’s definitely something to suit every member of your family in the area.
  4.     Hawaii – If you don’t mind a bit of crowding, the Hawaiian Islands may be the perfect choice for your winter getaway. Because each of the eight islands has their own attractions and offer something different to tourists, you’ll be able to find activities everyone in the family will enjoy. Luxury accommodations can get quite pricey, however, because the winter months are quite popular for tourists to visit Hawaii.
  5.     Las Vegas, Nevada – Vegas might have the dubious honor of being dubbed “Sin City,” but it’s also a surprisingly suitable family destination, and ranked number one on Getaroom.com’s list of wintertime bargain destinations in the United States. Average temperatures fall a bit short of tropical in the winter, hovering in the low 60’s during the winter months, but you still won’t need to pack those heavy jackets and scarves.
  6.     The Amalfi Coast, Italy – During the winter months, the Amalfi Coast region is one of the warmest areas of Italy, with average temperatures in the 50’s. Some hotels and restaurants are closed or on limited schedules during the winter months, but there are still plenty of attractions to keep everyone entertained and out of the snow during winter break.
  7.     Phoenix, Arizona – With spring-like temperatures hovering in the high 60’s, the many attractions and activities in Phoenix make the city a great escape from winter weather for a short jaunt during winter break. There are plenty of activities for kids, including museums and other educational pursuits, as well as a variety of outdoor activities.
  8.     Guanacaste, Costa Rica – From zip-lining through rainforests and thrilling canopy tours to surfing lessons and low-key horseback trail rides, there’s plenty of tropical fun to be had in Costa Rica during the winter months. The crowds are almost non-existent and prices are dramatically dropped during the winter season, which can be quite rainy in certain areas but is easily avoidable by traveling a very short distance.
  9.     Orlando, Florida – Families have been making the pilgrimage to Orlando year-round for decades to visit the Happiest Place on Earth and take advantage of the many amenities. It’s significantly less expensive during the winter months, provided that you avoid peak days like Christmas, New Year’s and Valentine’s Day, and will have average temperatures in the low 70’s.
  10.     Cyprus – The third largest Mediterranean island is dotted with olive and citrus groves, mountains and beaches, and is an impressively low-cost winter vacation destination for families. Temperatures are in the high 70’s from November to February. The island also does not shut down during the winter low season, so you’ll still be able to visit historical sites, go hiking, and enjoy the many amenities of hotels whose rates drop by almost half from November through March.
 Good luck planning! Enjoy!

Post-Ebola Teen Girls in Sierra Leone subjected to Invasive Pregnancy Tests, Stigmatized

After the Ebola epidemic this year, the Sierra Leone government formalized an informal ban that has existed for ten years that prevent pregnant girls from attending school.

Amnesty International released a report yesterday, Friday, November 6, stating that thousands of schoolgirls in Sierra Leone have been forced to undergo humiliating and degrading public pregnancy tests since the government banned pregnant girls from attending mainstream schools and taking exams.

Teachers and nurses have examined girls’ breasts and stomachs in front of their peers and forced the girls to take urine tests, the report “Shamed and blamed: Pregnant girls’ rights at risk in Sierra Leone” stated.

The invasive exams are discouraging many girls from going to school, whether they are pregnant or not, the rights group state.

“This humiliating and degrading treatment has led to girls taking health risks to sit exams, such as strapping down their stomachs and breasts,” Amnesty International West Africa researcher Sabrina Mahtani told the Thomson Reuters Foundation.

“Pregnant girls are being blamed and shamed… as Sierra Leone moves forward from the devastating Ebola crisis, it is vital that these girls are not left behind.”

While schools were closed for a year, many girls were subjected to sexual violence, abusive relationships were rife in Sierra Leone during the Ebola outbreak, and fueled a spike in teenage pregnancies, Amnesty said in its report “Shamed and blamed: Pregnant girls’ rights at risk in Sierra Leone”.

The epidemic hindered access to services including abortion, emergency contraception and post-rape counseling, while the closure of schools for almost a year left many girls particularly vulnerable to violence, the rights group said.

“It is not right. During Ebola, their parents did not have money so many girls had to go to men,” one girl told Amnesty.

The other unfortunate thing about it all is that Sierra Leone already had one of the highest teenage pregnancy rates in the even before Ebola broke out in December 2013.

One in four girls between the ages of 15 and 19 had children or were pregnant, a 2013 government health survey found.

The United Nations Population Fund (UNFPA) estimates preliminary that the number of teenage girls who became pregnant in Sierra Leone at the height of the Ebola outbreak at more than 14,300.

After the ban was imposed earlier this year, The Ministry of Education stated that having pregnant girls to go to school would undermine their ability to concentrate and participate in class, expose them to ridicule and encourage others to become pregnant.

No word on the boys and what the fact they are fathers would do. Nope. Just the girls. le sigh

The government announced in May an alternative “bridging” education system allowing pregnant girls to go school, but at different premises and times to their peers.

The isolation could lead to further stigmatization and marginalization of the girls, Amnesty said in its report.

Only six in 10 girls between the ages of 15 and 24 in Sierra Leone are literate, compared with three-quarters of boys in that age range, figures from the 2013 government health survey show.

“Education is a right and not something for governments to arbitrarily take away as a punishment,” Mahtani said.

“Pregnant girls are being denied key chances to move forward with their lives, and to ensure early pregnancy does not become the event that determines the rest of their lives.”

Several organizations including UNICEF, the UK Department for International Development and UNFPA are helping girls to continue their education after giving birth, and give counseling and access to maternal and neonatal health services.

The World Health Organization says that even though maternal death rates in Sierra Leone has been halved  between 1990 and 2013, it still has one of the highest rates in the world with more than 1 in 100 women dies in childbirth.

My Hunt for Jennifer Hudson’s Signature Piece: The Statement Necklace

ne-yo-jennifer-hudson-think-like-a-man-vidcap-thumb-473xauto-9416

I am a HUGE fan of statement jewelry. Big bold rings, chunky bracelets, exotic earrings, belly & body chains, toe rings, arm asps, the works!

They really make an outfit or look pop and are also great conversation pieces.

Of all of these, I adore statement necklaces the most. I’ve been trying to hunt down the one Jennifer Hudson wore in her 2012 video for “Think Like a Man”(above) but haven’t yet.

Hudson, like my girl Bey, are known for being seen in some pretty awesome statement jewelery. Shout out to her stylist team.

So if you know who makes this piece and where I can get it, please give me a clue!

Here are some awesome statement necklaces I peeped on out partner site PopSugar’s Shopstyle Collective while hunting down Hudson’s !

She was definitely glowing and looks very happy, content and fulfilled. Get it, mama!

The singer, who killed it on her 2009 tune “Give it To Me“,  told xoNecole that she met Cotter a couple years ago “I knew I couldn’t have found love and have been open to it if I had not let go of all the other things that were in the way,” Fiona told the site.

“I spent a lot of time on my own, working on myself and I think that’s what’s led me now to be in a really good relationship. I feel like I served myself and I fulfilled a lot of the things that I needed to do for myself as a woman, and I feel like that’s so important.”

Cotter, also a singer-songwriter, took to Instagram to follow up his girl’s announcement too.

“We re so excited for this next chapter of our lives!” the very handsome “There is no greater blessing and I’m so happy to go on this journey with my best friend and love of my life. I’m gonna be a Dad!!! Thank you for choosing us. I promise we won’t let you down. I love you.”

Awww! congrats! The “It Kills Me” singer did a great job keeping it under wraps. Fiona looks to be close to 8 months preggers in the video. Though now in hindsight, stalking her IG feed, she looks to be very preggers in this share! (smile)
